My Mother's Birthday Cake
Mothers do have the answer! I wanted to do something nice for my mum for her birthday and have been asking myself what kind of cake I should make for her. Then the other day, I was talking to her and it occured to me that I should just ask her. Blueberry, she said. Blueberry it is.
It couldn't have been a better cake. I knew my mum would enjoy something relatively light, so I decide to make a sponge cake with cream chantilly and blueberry filling.
First we made the filling. Didn't really use a recipe. Add about a lemon's worth of juice, a bunch of blueberries and some sugar and bring to a gentle boil. Add corn starch to thicken. Taste it and if it's too sour, add more sugar till it's the way you like it. Set aside to cool.
Next, we made the cake and the frosting. I used this amazing recipe. When everything is nice and chilled, it's time to assemble the cake.
Cakes like sandwiches, except, you pile on the frosting after you're done with the sandwich part.
